Impossible Foods is a company that specializes in vegetarian, lab-created foodstuffs that taste impossibly similar to the real carnivorous meats they seek to imitate – think of them as the John Carpenter’s The Thing of the vegetarian food industry. And their latest masterpiece, dubbed the Impossible Burger, is set to make its debut at New York restaurant Momofuku Nishi.
Here’s Nishi’s founder, celebrity chef David Chang, on the burger, which “bleeds” just like a real beef burger does, despite the fact that it’s entirely plant-based:
“I was genuinely blown away when I tasted the burger… the Impossible Foods team has discovered how to re-engineer what makes beef taste like beef. We’re always looking to support people who are making the best products in the best ways possible and to me, the Impossible Burger is one more example. First and foremost, we think this makes a delicious burger.”
Putting aside the presumable health benefits of eating an artificial bleeding burger rather than an authentic one, it’s interesting that artificial blood is somehow creepier than real cow blood—it makes me think of Dr. X and his “synthetic blood,” but that might just be me.
