Buffalo Trace Experimental Collection Extended Stave Dry Time Bourbon

Buffalo Trace does a pretty cool thing called the Experimental Collection, which is an ongoing series of releases of experimental bourbon that let the public in on their laboratory tinkering. The latest release in this collection is “Extended Stave Dry Time.”

Stave drying is the process by which wooden planks are dried out before being used to build the barrels in which the Buffalo Trace bourbon is aged. And this experiment takes the standard stave drying time of about six months and extends it by 100%, just to see what happens. And hopefully, the extra drying time results in an enhanced flavor.
